PRACTICE ON THE GRAPS
After a great attention to the fruit and after the highest level of maturation, the grapes will be put in a special space to wither for a natural over ripening. There will also be a weight loss of grapes from 35 to 40 % (110 days to wither)

VINIFICATION
First fifteen of January, maceration on skins for 25 days, soft pressing, slow fermentation in wood casks
Maturation: minimum 12 months in wood casks
Conservation in thermo conditioned stain tanks. Bottles in sterile line, closing vacuum packed. |
